Enzymes are a critical element to our health. They are the
‘workers’ in our body that make sure all the important processes
that are necessary for our health take place.
Think of the vitamins, minerals, and proteins as the tools and the raw materials
that the enzymes ‘work’ with to do everything: build tissue, break
down tissue, regenerate cells, repair cells, etc.
There are two general categories of enzymes: digestive enzymes and metabolic enzymes.
Metabolic enzymes are responsible for all the cellular repairs and
regeneration that our bodies need to stay alive and healthy.
Digestive enzymes are responsible for processing the food we eat so
it can be assimilated and absorbed.
The pancreas is the organ responsible for producing the enzymes in
our body: metabolic and digestive.
All raw plant-based food comes with the enzymes necessary for
digestion. When food is cooked at temperatures above 108 degrees,
ALL of its enzymes ARE DESTROYED. Same thing happens when it is
processed chemically, pasteurized, etc. Which means that all the
cooked food we eat is enzyme-depleted.
One of the main reasons that the Standard American Diet (SAD) is so
dangerous to our health is that it is completely devoid of the
enzymes necessary for its digestion.
When we consume this type of diet the pancreas has to ‘borrow’ from
the metabolic pool of enzymes to produce digestive enzymes. This is
really stressful on the pancreas AND with less metabolic enzymes
available, less cellular repair and regeneration occurs.
Now do you get a sense of how the SAD contributes to pre-mature and
accelerated aging?
This is why enzymes are SO IMPORTANT. And why, if you attend the
